Spinach
Saute 1 pkg frozen or 1 lb. freash in olive oil and a pad of butter with...
• 1 tsp minced garlic or fresh
• 1/4 c chopped onion
• 1 tsp. parsley
• 1/4 tsp lemon juice
• Salt and pepper to taste
Makes 3 to 4 servings.- do not freeze.

Broccoli Rabb - fresh
Saute in olive oil and a pad of butter with...
• 1 tsp minced garlic or fresh
• 1/4 c chopped onion
• 1/2 tsp. Crushed red pepper(optional)
• 1 tsp. parsley
• 1/4 tsp lemon juice
• Pinch of Marjoram
• Sprinkle of Basil, parsley and Oregano
• Salt and pepper to taste
Makes 3 to 4 servings - do not freeze.

Escarole Soup
This will be prepared for 6 to 8 servings, jar freezing intended.
• 2 lbs. escarole, washed and drained
• 34 oz. can of chicken broth
• 20 mini meatballs, from your packaging
• 1/4 cup of olive oil
• 1/4 tsp lemon juice
• 1/2 med onion, chopped
• 1 tsp. minced garlic or fresh
• 1 tsp. each of parsley, basil and oregano
• 1/2 tsp. crushed red pepper
• Pinch of Marjoram
• Salt and pepper to taste

Bring broth to a boil; lower heat to med, add all ingredients. Cook for 10 minutes. Add 2 large eggs and stir into mixture. Lower to low temp and simmer for 10 minutes. Serve with sprinkle of parmesan or locatelli cheese. Use 1 pt. Mason jars to freeze unused portion. Makes 5 to 6 servings.
